Always on the search for healthier ways to enjoy the sweet goodness in life, without it keeping me from any goals or progress on my fitness journey. I came across these brownies when Michaela made them and shared it on her Instagram story. She didn’t even hesitate sharing the recipe with me, and like anyone should with anything in life, I tweaked it a teeny bit to my taste 🍴
And since I’ve been asked for recipes many times before, I am happy to share this tested and approved recipe 😊
So without further a due, here it is:
- 1 can of Chickpeas
- Two Eggs
- 2 tsp baking powder
- 1 heaped tbsp of Cocoa Powder
- Honey/Maple Syrup/Sweetener of choice
- 2 tbsp of full fat dairy/coconut milk
- 1 tsp of Instant Coffee
Side Note: Since the honey/maple syrup is the only sweet component to the mixture, add enough to suit own taste, +- 2 tbsp.
Mix everything together in a blender. Grease a suitable oven tray with either cooking spray or butter/margarine, and bake for no more than 25 mins on 180 degrees celsius.
Almond flakes/chocolate chips/blue berries – OPTIONAL
Just heat it up for 10 seconds in the microwave, and you’re good to go 👍🏼
Easy to make, easy for meal prep, and easy to freeze if you want to save the goodness for later than a week 💖
